Ultimate Braai Master judge – and proud owner of 4 Big Green Eggs – Bertus Basson hosted another EGGcademy class at Overture Restaurant last night. The intimate hands-on demonstration of the EGG’s versatility included a starter of grilled squid with cucumbers, capers, fennel and lemon. This was followed by a sirloin steak with a Sugar and Spice rub, accompanied by grilled cauliflower, walnuts and Parmesan. Dessert was a decadent combo of roast bananas, caramel and chocolate.
